Saint Patrick’s Day Green Inspirations

Green may not be everyone’s color, but it is on Saint Patrick’s Day—the one day of the year where everyone’s Irish! Here are a few green-inspired options so you can celebrate without sacrificing your progress.

Eat Green

Saint Patrick’s Green Goodness Salad

It’s great to eat the rainbow—but on this day we’re all about those good green veggies! Pay homage to Saint Patrick’s Day with a beautiful green salad bursting with flavor.

Ingredients

  • 1½ cups green peas (frozen is fine)
  • 400 g asparagus, trimmed and cut diagonally into 2 cm pieces (about 4 cups)
  • 4 cups sugar snap peas, trimmed
  • 3 tbsp minced shallots
  • 3 tbsp extra-virgin olive oil
  • 1½ tsp grated lemon rind
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • ½ tsp ground black pepper
  • 5 cups watercress
  • 1 cup loosely packed fresh flat-leaf parsley leaves
  • ½ cup torn fresh mint leaves
  • 1 firm, ripe avocado, cubed

Instructions

  1. Bring a large pot of water to the boil. Add peas, asparagus, and snap peas; boil until vibrant green (about 2–3 minutes). Drain and rinse with cold water.
  2. Whisk shallots, oil, lemon rind, lemon juice, mustard, salt, and pepper in a large bowl. Add blanched vegetables and toss to coat. Gently fold in watercress, parsley, mint, and avocado.

Thai (& Luck of the Irish) Sesame Edamame

Ingredients

  • 3 tbsp water
  • 4 cups edamame pods
  • 1 tbsp dark sesame oil
  • 1 tbsp rice vinegar
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 1 tsp toasted sesame seeds

Instructions

Bring water to a boil in a large skillet over medium-high heat. Add edamame, cover, and cook 2 minutes. Uncover, add oil, vinegar, salt, and pepper, and cook 2–3 minutes until the liquid evaporates and pods are coated. Transfer to a bowl and sprinkle with sesame seeds.

Drink Green

Easy Kale & Ginger Smoothie

They say “drink your greens,” so why not on the most Irish day of the year? This smoothie combines kale and ginger for a nutritious pick-me-up or gentle fast breaker.

Ingredients

  • 1 cup roughly torn kale
  • 1 medium frozen banana
  • 1 cup unsweetened almond milk
  • ½ cup plain Greek yogurt
  • 1 tsp chia seeds
  • ¼ ripe avocado
  • ½ tsp sliced fresh ginger

Instructions

Place all ingredients in a blender and process until smooth.
