Go green (and lean) for St Patrick's Day

Green may not be everyone's color, but it is on Saint Patrick's Day – the one day of the year where everyone's Irish! 

We've seen incredible success stories since launching. Ranging from Calocurbers who've lost nearly half of their body weight, to those who wanted to get more fit and some who just wanted help maintaining their goal weight. 

We don't want to dangle the carrot of temptation for classic St Patrick's day fare (Green Guinness anybody?). So, here are a few different green inspired options for you to celebrate the day while still claiming your 24-hour Irish heritage!

Eat Green

Saint Patrick's Green Goodness Salad 

It's great to eat the rainbow – but on this day we are all about those good green veggies! You can pay homage to Saint Patrick's Day with a beautiful green salad bursting with goodness. 

1 ½ cups green peas (frozen is fine)
400g asparagus – trimmed and cut diagonally into 2cm pieces (about 4 cups)
4 cups sugar snap peas, trimmed
3 tbsp minced shallots
3 tbsp extra-virgin olive oil
1 ½ tsp grated lemon rind
2 tbsp fresh lemon juice
1 tbsp Dijon mustard
¾ teaspoon salt
1/2 tsp ground black pepper 
5 cups watercress
1 cup loosely packed fresh flat-leaf parsley leaves 
½ cup torn fresh mint leaves
1 firm, ripe avocado, cubed 

  1. Bring a large pot of water to the boil. Add green peas, asparagus, and sugar snap peas, boil until vibrant green (about 2/3 minutes). Drain and rinse well with cold water. 
  2. Whisk together shallots, oil, juice, mustard, salt, and pepper in a large bowl. Add blanched vegetables, toss well to coat. Add watercress, parsley leaves, mint leaves, avocado, and toss gently to combine. 
Thai (& luck of the Irish) Sesame Edamame 

Sitting down to enjoy some pre-dinner/drinking snacks before you head out to celebrate? Try swapping those fries for these green snacks, which are just as more-ish.

3 tbsp water
4 cups edamame pods
1 tbsp dark sesame oil
1 tbsp rice vinegar 
½ tsp salt
½ tsp ground black pepper
1 tsp toasted sesame seeds

 Bring water to a boil in a large skillet over medium-high heat. Add edamame; cover and cook 2 minutes. Add oil, vinegar, salt, and pepper to a pan. Cook, uncovered for 2-3 minutes or until liquid evaporates and pods are coated. Place edamame mixture in a bowl; sprinkle with sesame seeds.

They say drink your greens…so why not give it a crack on the most Irish day of the year by combining the goodness of ginger and upping your 5+ a day to include delicious greens (without going to the hassle of cooking them). We've got you covered with this easy kale and ginger smoothie to help gently break your fast or as a healthy pick me up throughout the day. 

1 cup roughly torn kale
1 medium-sized frozen banana
1 cup unsweetened almond milk
½ cup plain Greek yogurt
1 tsp chia seeds
1/4 ripe avocado
½ tsp sliced peeled fresh ginger

Place all ingredients in a blender; process until smooth.
